I scratch bake all of my familys daily baked goods and this is hands down the most universally delicious and versatile flour I've ever used, in a word its perfection! Pancakes and muffins are airy and tender. Breads, pastries and english muffins are exquisite. The absolute best part is how gentle it is on the digestive system. I can't imagine using anything else, just wish it came in larger sizes!
